Snap Beans

Fresh snap beans cooked with extra virgin olive oil "OLYA", fresh tomatoes, onions and parsley. It is served hot with bread, with or without meat.

  • 1kg snap beans, trimmed
  • ¾ cup of extra virgin olive oil "OLYA"
  • 1.5 onions, chopped
  • 2 cloves of garlic, chopped
  • 2 tablespoons chopped parsley
  • Salt and fresh ground black pepper
  • 500 ml hot water

  • Wash the snap beans and drain them in a colander.
  • Heat the half the of extra virgin olive oil "OLYA" in a casserole over medium heat.Add the chopped onions and saute until tender.
  • Add the snap beans and blend well, stir in the garlic, the fresh tomatoes and the rest of olive oil till the beans are coated.
  • Add hot water, turn the heat down and cook for 40 minutes, until the beans are soft and most juices have evaporated.
  • AAdd salt, pepper and the chop parsley.
  • Serve these traditional Greek beans with a slice of delicious Greek feta.
